Ingredients:

2 ½ cups red raw rice

½ cocount, grated

15 pieces jackfruit ripe

Jaggery, as per your taste

Pepper crushed (optional)

Teak leaves

Pinch of salt

For filling (Method 2)

1½ cups coconut, grated

½ cup jaggery

½ tsp cardamom powder

DIRECTIONS

  • Wash and soak the rice overnight (or at least 4 to 5 hours).
  • Grind rice along with coconut, jackfruit. Make sure it turns out to be a thick batter.
  • You may add crushed pepper (optional) and salt.
  • Keep the steamer ready with the boiling water in it. Pour enough batter on the teak leaf and wrap as seen in the picture.
  • Line the steamer with the teak leaf or banana leaf and place the wraps on them. Cover the lid and let it steam for ½ hour or more.
  • Insert a toothpick to check if done. By this time the colour of the leaves will turn to redish.
  • Method – 2
  • Wash and soak the rice overnight (or at least 4 to 5 hours).
  • Grind rice along with jackfruit & salt. Make sure it turns out to be a thick batter.
  • Make a preparation of filling with coconut, jaggery & cardamom powder.
  • Keep the steamer ready with the boiling water in it. Spread the batter on the teak leaf and pour some filling and cover with more batter on top. Gently wrap them into a packet shape.
  • Line the steamer with the teak leaf or banana leaf and place the wraps on them. Cover the lid and let it steam for ½ hour or more.
  • Insert a toothpick to check if done. By this time, the colour of the leaves will turn to redish.
