Polov is a traditional Mangalorean dish prepared with Ash pumpkin. Since the ash pumpkin has a very blunt taste few pieces of mutton is added to this to enhance its taste .
Polov is prepared mostly during the wedding roce function in catholic community. Traditionally this was prepared by drying Coconut in hot sun for 2 days before the preparation and the mutton head meat was used to prepare this also called "the poor man's dish".
The traditional recipe does not include curry leaves and khuskhus. This is optional .
Serve it with sannas, bread or boiled rice
